
The Orange County Fair starts Friday, July 16, 2010. Little Chef Alexis (aka Chef Lexi) has entered her Food Eraser Collection into the Youth Competition, Junior Collections. Nibbles of Tidbits hopes Chef Lexi gets a Blue Ribbon! It’s too late to enter the competition now, but you can see the results at the OC Fair — See you there.

For a school project, Chef Lexi from Kids in the Kitchen made a State Cookie. How fun is that! The kids loved shaping the Cookies into their chosen states. Lexi picked South Dakota, since she traveled there in a motorhome for vacation last year. It’s a little hard to tell, but Mount Rushmore is made of a mound of Frosting with 4 Marshmallows on top. She drew on the faces with a marker. Too funny — I love it.

My adorable Chef Nieces, Lexi on the left and Bailee on the right, have prepared a fair amount of treats for Nibbles of Tidbits — We’ve posted all in Kids in the Kitchen. They recently attended a church camp, Forest Home where they learned how to make homemade Pasta Noodles, Parmesan Chicken and Dessert Crepes. I still haven’t made Pasta Noodles from scratch and now must ask my Chef Nieces to teach me. What kind of Foodie do I think I am? 🙂

As far as packaged Hot Dogs go, Hebrew National is our current favorite. We recently bought a pack and made some funny dogs. 🙂 Above Octopus Hot Dogs dodge a wave of Chili and Mustard — They’re crispy, tasty and cute, and should technically be in the Chili/Mustard water instead of the invisible sand, ha. And below (l-r) we made a Chili Cheese Dog, a Deluxe Dog (Mustard, Tomatoes, Dill Relish & Onion), a Francheesey (inspired by Katella Deli’s menu), and a Kraut and Mustard Dog.




And mustn’t forget the Mummy Dogs below, made from Bread Dough that’s stretched and rolled around each Hot Dog like a Mummy, then baked in the oven. Hebrew National Hot Dogs are always good well done and kids especially love to eat ’em in the form of an Octopus or Mummy.

Hebrew National reports to have no fillers or by-products, nor artificial colors or flavors, and are made with premium cuts of Kosher Beef. We’ve enjoyed them for years and provide fun ways of doing so above.

Chef Lexi from Kids in the Kitchen is snapping photos of our Famous Family Chicken samples (below). For years our family gatherings have included my Dad’s amazing BBQ’d Chicken — Before sitting down at a beautiful table setting designed by my Mom, we always enjoy samples that are now served by my lovely Chef Nieces.

Doesn’t this look nicer than dealing with the holiday shopping crowd the day after Thanksgiving? We took a family RV down to the South Carlsbad Cliffs and had fun BBQ’ing, walking along the beach, playing Wii games, painting rocks, laughing, chillin’, eating and drinking — All are much better than following the lines. No thanks Black Friday, we Christmas shop on our own time.

It’s a Nibbles of Tidbits moment of branding painted by one of our Kids in the Kitchen contributors, Artist Bailee — Great job on the Egg and Bacon, always a favorite.

I pre-steamed the Artichokes at home, then grilled them on the BBQ at our camp spot while watching the sunset over the ocean.




And made 3 different Dipping Sauces for the Artichokes — Garlic Aioli, Lemon & Dill and Walt’s Wharf’s Lea & Perrin’s Sauce. Most dipped into was the Garlic Aioli (Mayo, Lemon, Garlic & Seasoning Salt). 🙂

We also tested the Cook or Be Cooked Wii Game in the RV and will post about that soon. And the Chocolate Cake previously reported about was good, but certainly not the best ever.
Our resident Junior Chef Lexi made this beautiful Cake from scratch. It’s sure cheery for a Halloween Cake with its festive colors and application of Sweet & Sour Peach Candies. We don’t have the recipe, since we’re featuring the Cake for its creative outer decorations. Lexi is currently 10 years old and made this entire Cake on her own. We post it to show that kids can create great things in the kitchen too. Thanks Chef Lexi — It sure looks delicious! We can’t wait to see what she makes for Christmas. I don’t have the complete story on this yet, but it’s the latest creation by Chef Lexi from Kid’s in the Kitchen. Ta Da. The recipe is most likely from the best kid’s cookbook I’ve seen so far — Family Fun Cooking With Kids. I’ll find out and update this post soon. UPDATE: The recipe isn’t from the aforementioned cookbook. It came with the Gingerbread pan and I’m told it tasted bad. The words were “yukkie.” If you buy the pan, use a different recipe.

Thanks to my Parents for this wonderful Thanksgiving meal. A few of us can’t hold back from eating the Crispy Turkey Skin (with Salt) before the Turkey is carved, hence its less than pristine exposure.

And Chef Lexi made Apple Betty for Dessert — She shows how good it was. More Chef Lexi meals and recipes can be found under the ‘Kid’s In The Kitchen’ section.



Everything was great as usual. I’m a bit spoiled in that all I have to do is show up and eat. I’m thankful for all my blessings and I do help with the dishes.

Here’s another installment of Kids in the Kitchen. It’s Maple Pork Chops with Apples made by Chef Lexi. She’s 9 and pretty much prepared the entire dish with little assistance from her Mom. They said it tasted okay, but they did make a couple substitutions due to lack of ingredients. Perhaps if the recipe is made as written it would taste better. It certainly looks good.
The recipe is from one of the best Kid’s Cookbooks, Family Fun Cooking With Kids. I’ve previously posted about it and will continue to do so, since it has so many great recipes. Lexi plans to cook many of them. It’s a great learning experience and she has so much fun with it. Information about the Cookbook is found in the related link. Great job Lexi!

It’s half a homemade Waffle with Boysenberry Syrup and fresh cut Strawberries made by ‘Kids in the Kitchen’ while visiting Lake Arrowhead. It was a colorful breakfast, but sadly the forest outside is badly burned. 🙁
Almost one year ago, a family cabin in Lake Arrowhead, California almost burned down. If you recall, it was reported on the news in late October 2007 — There was a big fire in Lake Arrowhead and surrounding parts of the mountain. One fire burned all the way up to the back of my Sister’s cabin.
We had heard that most cabins on our street (Brentwood) were on fire, then finally learned that ours was one of the few still standing. We were/are so thankful and convinced that ours was spared partly due to a fire access road directly behind it.
Before the fire we all stared out the big cabin window and colored a picture of the forest. We recently found those pictures and feel very sad for the trees. Our crayon colors are now gray and black, whereas they were several shades of green and brown. Our Waffles tried to cheer things up.

We THANK ALL the Firefighters who helped save our cabin and others. Sadly most of the trees in our area are burned, but many others are okay, and several cabins are being rebuilt.

The recipe is from my Niece’s Cookbook, Family Fun Cooking with Kids. And as declared, it is a simple Bread, especially if you’re not the one getting your hands dirty. I supervised the preparation of this Turtle Bread and looking back the process wasn’t too bad.
BUT there was a time in the middle that hands were stuck to the Dough and Flour was flying. There are no pictures of that in the book, nor here, since they’re not pretty. But Oil up your hands real good BEFORE starting to knead the Dough.



This post is another feature of Kids in the Kitchen with Bailee and Alexis. It was FUN to watch the Bread rise and shape it into a Turtle. Its eyes are Raisins that expanded to look like Olives.
The aroma of Bread baking in the oven and the opportunity to eat your own homemade Bread are special experiences. We want to do it again. We saw this recipe in a cookbook I recent bought for my Niece’s Birthday — We thought it was so clever and cute that we made it during a sleepover at a family cabin in Lake Arrowhead. That’s us on the cake from left to right, my sister Ami, Niece Lexi, Mom, Me and Niece Bailee.
We look a bit like zombies, but it was fun to make. Our heads are Nilla Wafers, the pillows are Marshmallows, and the bodies are Twinkies. We used Jawbreakers for the eyes, sweet and sour Candy Rope for the bed skirt and trim, and made a Milk Chocolate Cake instead of a Vanilla one.



Here’s a picture of the book cover and recipe. The original looks more polished — It was harder to make than we expected. It’s tricky frosting over the Twinkies, we added toothpicks to hold them in place. The softer the Frosting and bed trim Candy, the better. It was a cool experience together.

Lexi (9) made this Egg Flower Soup. It looks terrific. I’m told she loved making it and will be cooking again tonight. The Soup tasted a little bland at first, until she learned the importance of Salt in good tasting food.
Bailee (11), another cook featured on Kids in the Kitchen, appears to be a talented Artist too. This is her first picture on the first day of Art Class. It has good shading.
Both creations are very impressive. Great job kids! Her Soup picture reminds me of an Egg Flower Soup I once made and photographed. It was good too. If you want it now, click on the link below.

My adorable Chef Nieces Bailee and Alexis “Lexi” have taken an interest in cooking. They recently made the pictured Brownies for their Dad’s Birthday. They used Pillsbury’s Funfetti Traditional Fudge Brownie Mix. I’m starting this section ‘Kids in the Kitchen’ for them and other kids who like to cook with their family.



My Chef Nieces even started their own cookbook — It’s so cool. They’ve got 3 recipes so far. And we (mostly them) made Hot Cocoa with Mini Marshmallows last night. I just heated and poured the hot Milk.

My Nieces made this for breakfast today and sent it to me in an e-mail. It’s a Strawberry and Banana filled Crepe with Chocolate Sauce. It looks great — I wish I got to eat it. Thanks!
