The Top Chef All-Stars Situation.

Top Chef All-Stars started last week and airs again soon (Wednesdays on Bravo TV).  I like Top Chef, but haven’t been riveted by its happenings the past few seasons, though I’ve caught most shows, since they rerun them over and over.  And right now I’m happy to be excited about the show again, because of the All-Stars.  Already knowing the personalities makes it more interesting.  The formula was getting a little boring, although it’s better than most TV programming.  I admit to liking Millionaire Matchmaker and The Real Housewives of Beverly Hills too — That Camille, I can’t stand her, but we talk food here.  Let’s get back to Top Chef All-Stars…

I like Carla.

I like Fabio too — Our Guest Blogger Bonnie recently reviewed his restaurant, Café Firenze posted here.  Last week during Top Chef All-Stars, Fabio was reamed by Judge Anthony Bourdain, who repeatedly said he “hated” his dish.  Trying to be funny, AB was pretty much a dick.  It’s unnecessary to be so dramatically negative, which applies to all judges, and cheers to Fabio for speaking up about it.  He handled himself well.  I probably would’ve cried after putting so much effort into it.

The All-Star Chefs were delivered the ingredients they used and had to pack their knives for and go, during his/her respective season.  Each had to make the dish better or at least passing this time — How fitting.  A perfect first challenge.

Wanted to quickly commentate on the photos and generally about the show, not provide a complete recap — Who has time?  Watch the show.  If further compelled, we’ll weigh in.

Just In Time For Top Chef All-Stars: Fantastic Food, Fun & Fabio.

Top Chef All-Stars starts this Wednesday, December 1st on BRAVO — Bravo to that!  Here’s the contestant line-up, which includes Fabio Viviani from Season 5.  He has a restaurant in Moorpark, California — Café Firenze, where Bonnie, our traveling Guest Blogger recently dined.  She raved about her experience, thus we’re certainly rooting for him.  Other Top Chef All-Star picks will be selected after first airing.  Until then, Bonnie reports about her meal by Fabio.  I think she’s in love.  I sure wish she’d get a camera, as her Fabio photo and most didn’t turn out.  Nonetheless, I appreciate the report and wish I’d been there.  Go Fabio!

Fantastic Food, Fun & Fabio. Fabulous!  That’s how I would sum up our dinner Saturday night at Café Firenze in Moorpark, California.

BRAVO TV’s Top Chef Runner-Up and upcoming Top Chef “All Star” contender Fabio Viviani was on hand to greet us and, after spending several hours at his restaurant, I can assure you that you will not be disappointed. While he is just as charming off the screen as he is on it, it is his food that truly stands out as exceptional.

In fact, the five course tasting menu that Fabio designed especially for us was magnificent, but since we let him use his own discretion rather than ordering from the menu, I can’t remember every detail.  There were three appetizers, including a silky smooth Imported Burrata Mozzarella, a pasta with homemade Duck sausage and a pancetta wrapped Jumbo Shrimp filled with gorgonzola cheese.  I think the latter was the best shrimp I have ever eaten.

The entrée consisted of grilled Colorado Lamb with braised pistachios – a truly unique combination of flavors – and the desert was something so creamy and luscious that all I can remember is how delicious it tasted, rather than its name.

And dinner was a lot of fun too, thanks to bartender Damiano Carrara. What’s with all the charming Italian men at Café Firenze?  I don’t know, but Damiano’s accent and prowess with a bottle — ala Tom Cruise in “Cocktail” – was quite the show.  His signature cocktails, one made with 2 Nite Vodka from Italy and the other with pomegranate were the perfect accompaniments to our tasting menu.

At this point I probably have convinced you about the food, but I have to inspire you with the interior design as well.  Naturally, everything has been imported from Italy (Firenze is the town where Fabio was born) and no detail was spared.  So don’t forget to check out the coffered ceilings and stunning chandeliers.

Moorpark isn’t exactly known as a dining mecca, so Fabio’s restaurant stands out as an exceptional experience.  I can’t wait to go back!  Good luck on Wednesday night, Fabio, I will be rooting for you.

(Note that what we had is very similar to what is called “The Chef’s Table” where you get five courses paired with either wine or martinis to compliment each dish for $75 each or five courses without alcohol for $50 each.  We loved this innovative concept.)

Have You Had Your Grapple Of The Day (Or Ever)? It’s A Different Way.

Have you heard of, seen or tried a Grapple yet?  I first saw them on Unwrapped.  They’re Washington Extra Fancy Gala or Fuji Apples that are infused with a concentrated Grape flavor.  It’s said that Grapples look like an Apple, but taste like a Grape, and is described to have the sweet distinctive flavor of a Concord Grape with the crispness of a fresh Apple.  Chef Lexi (below) from Kids in the Kitchen gives ’em a try.

And the verdict is in… Lexi and the tastin’ gang behind the camera (5 of us) were unanimous — The Apples were indeed fresh and tasted like Grape, but the Grape flavor unexpectedly tasted artificial.  Its scent and taste was reminiscent of purple, Grape flavored Candy or Soda, not that of a true Concord Grape, as we were hoping.

Since we’re always interested in different things, we had to try a Grapple.  They’re definitely of premium quality, but we didn’t fall in love with their flavor.  Regardless, we appreciate trying unique foods — It’s a fun time.

Although I haven’t watched it lately, I’ll forever be a long time fan of Saturday Night Live.  And I particularly LOVE the NPR Delicious Dish sketches — They crack me the hell up!  Since Nibbles of Tidbits is often about the FUNNY regarding FOOD, this video mixes right in.  And I’ve been a Betty White fan for years, before she became popular again.  She’s pretty funny! 😉

We’re Ready For A Throwdown With Bobby Flay’s New Cookbook.

Bobby Flay was at Williams-Sonoma South Coast Plaza yesterday signing his new cookbook — Bobby Flay’s Throwdown!: More Than 100 Recipes From Food Network’s Ultimate Cooking Challenge.  Since the line was way too long and my patience and available time too short, Jennifer provided her adorable photo for posting above.  Thanks Jennifer (and Bobby).

Since the book includes recipes from Bobby Flay and a few hometown challengers, we’ll soon be hosting our own Throwdown!  We plan to make competing recipes and have a blind taste test to see if we agree with what went down at the Throwdown.

“Serious Sliders” Recipe By The New York City Food Guy.

I stumbled upon the above video by the NYC Food Guy — He sold me on the preparation of his Serious Sliders.  It’s different, easy and produces delicious Sliders (aka Mini Cheeseburgers).

After watching the video, we were seriously compelled to make these Sliders immediately and so did, as shown in the step-by-step photos posted below (left – right working on downward).  Hover your cursor over each photo to learn more.  It’s a fun recipe to make.

Thanks for the Serious Sliders NYC Food Guy — We’ll make ’em again.  They’re no joke!  FYI:  Lawrence, the NYC Food Guy says… “Sliders and Mini Cheeseburgers are totally different!  Sliders are actually Steamed Burgers, whereas Mini Cheeseburgers are just that, Mini Burgers.  They’re completely different animals.”  I think we may need to let a few restaurants know that.

Skinnygirl Margarita For A Three Hour Chick Finale.

A friend brought over Bettheny’s Skinnygirl Margarita for the three hour Bachelorette finale.  Although we’d been into the show throughout the season, we were a little bored at the end.  We’re not really fans of Ali, like Roberto and love Chris L.  The best thing Ali did on the show was let Chris go early, so to spare his feelings a bit.  Bravo for that!  Chris needs to be the next Bachelor.  We wish Ali and Roberto well, but the best part of the finale was the Skinnygirl Margarita.  We didn’t have expectations one way or another and were pleasantly surprised by its fresh Lime flavor — It wasn’t too sweet and it’s nice and stiff tasting.  We served it on the rocks with a squeeze of Lime and will buy it again.  And it does work, we’re skinny girls. 😉

Now Casting: Kitchen Nightmares With Chef Gordon Ramsay.

Personally I’d never want to be on a show that places Chef Gordon Ramsay in the position of judging me — We’d probably end up in a food fight (that would hopefully end in laughs).  Overall I’m not a fan of the a-hole approach, but if you’re looking to be embarrassed on television, possibly humiliated, yelled at, or have food dumped on your head, casting is now happening for Kitchen Nightmares.  Not sayin’ the above will surely come to pass, but apply at your own risk and good luck!  Kitchen Nightmares, Hell’s Kitchen, hint, hint — It’s not going to be fun for you, but hopefully it will ultimately do good things.  The PR is posted below:

Marble Rye For A Laugh And As Toast.

It’s a Marble Rye [whose] purchase was inspired by a Seinfeld episode.  We still love Seinfeld and need a laugh as we continue to work with Network Solutions on a few nagging technical issues.  In searching for the above link, we stumbled across a blog named after the famous episode — Very cool, we might have picked that ourselves.  Each morning this week we’ve enjoyed Marble Rye Toast while thinking about Jerry mugging an old lady for a loaf — Shut up y’old bag. 🙂 Next we want to bring a loaf to a dinner party and then take it back when the hosts aren’t looking.

California Avocado Commission & Too Hot Tamales Interactive Lunch.

Nibbles of Tidbits was recently invited by the California Avocado Commission to attend a gourmet, interactive lunch and cooking demonstration with chef partners Mary Sue Milliken and Susan Feniger of the Too Hot Tamales.  Since I was unable to attend, but didn’t want to miss it, Nibbles of T sent its resident Guest Blogger, Bonnie of Bonnie Joy Designs.  She always provides an interesting angle to a story and was excited to receive a personally signed copy of Cooking With Too Hot Tamales (below). 

Ahhhh – Those Avocados were Awesome!

Avocado advocates Mary Sue Milliken and Susan Feniger (a.k.a. The Too Hot Tamales) along with the California Avocado Commission hosted a rousing, festive Food Blogger-only event ahead of Cinco de Mayo at their downtown L.A. restaurant, Ciudad, last Saturday. The afternoon began with a surprise. Actually, it was the “interactive” portion of the show, which turned out to be a “Top Chef” style competition featuring the Food Bloggers themselves as the chefs along with California Avocados, and a very long table full of potential accoutrements.

The Food Bloggers were given only seconds to pair up (I assume none of the Bloggers had ever met one another before, which made what came next even more amazing), then they were given just 3 minutes to flesh out (pardon the pun) their best recipe for guacamole. Then they got a mere 5 minutes (yes, there was a timer!) to execute their dish and 2 more minutes to give it a definitive name. I can report that the Food Bloggers took this competition very seriously, even if it was all in fun.

And I don’t think I need to tell you who the judges were… But what I can tell you is that even they were impressed at how well all 10 recipes turned out. Bravo! (Sorry Susan, that’s actually not a plug for the network you are on as one of the final “Top Chef Masters” on May 5th…or… maybe it is). I think I got to sample all ten dishes, and they really were all tasty and creative, so everyone was a winner.

The next hour featured the Too Hot Tamales doing what they do best – whipping up a four course meal with each one featuring avocados as the core ingredient. If you want to see poetry in motion, then you need to experience Susan and her long-time business partner Mary Sue as they whirled and twirled their way through a menu that included a Crispy Avocado Taco, an incredible salad with fried (yes, fried) capers, Chicken and Avocado Chilaquiles and for dessert, Avocado and Mango Slices with a Creamy Yogurt Dressing. They even managed to blend an Avocado and Orange “Liquado” to drink. Needless to say, each dish was a masterpiece.

Ciudad Executive Chef Jeremy Tummel and Jan DeLyser from the California Avocado Commission also joined in the fun that happened at this invitation only event. If you came away from this afternoon hungry, then you did not attend the same event that I did. The attention to detail was impeccable – from the beginning Margarita to the personalized cookbooks at the end – and was well appreciated by the interior designer in me.

I now have a fresh appreciation for a fruit that is locally grown and nutritionally packed. So be sure to add Avocados to your daily diet, and not just on special occasions or on Cinco de Mayo!

Thanks Bonnie.  I love Avocados too and my parents eat ’em almost daily.  It looks like I missed a pretty cool event, but I’m happy to have the exciting report and photos.

Cook Or Be Cooked Wii Game By The Food Network.

My favorite part of the Cook Or Be Cooked Wii Game is watching Susie Fogelson gag and Mory Thomas fall back on his chair in disgust of most of the dishes we prepared, HA — We cracked up at that.  We actually wanted more and were disappointed that we didn’t see additional ways of showing dislike.  I know that’s not the object of the game, but it’s entertaining.  We wanted them to run out of the room, fall on the floor, or alternately gag and fall back.  Their reactions are a bit redundant, until you get better at the game.

The graphics and likenesses are well done — It’s a little confusing at first, but once you figure out how to go back and forth between the different dish preparations, it’s more interesting.  Wii Cook Or Be Cooked is fun, but we had a better time playing Wii Air Hockey, Skee Ball, Darts, Bowling, Basketball and Shuffleboard the same day.  We were (6) on an RV vacation when we tried Cook Or Be Cooked.  BBQ’ing on the beach in between our Wii game competition was a great time.  We cooked and got cooked by the Food Network this weekend and look forward to doing it again.

Doesn’t this look nicer than dealing with the holiday shopping crowd the day after Thanksgiving?  We took a family RV down to the South Carlsbad Cliffs and had fun BBQ’ing, walking along the beach, playing Wii games, painting rocks, laughing, chillin’, eating and drinking — All are much better than following the lines.  No thanks Black Friday, we Christmas shop on our own time.

And made 3 different Dipping Sauces for the Artichokes — Garlic Aioli, Lemon & Dill and Walt’s Wharf’s Lea & Perrin’s Sauce.  Most dipped into was the Garlic Aioli (Mayo, Lemon, Garlic & Seasoning Salt). 🙂

A Favorite Snack — A Deconstructed Sandwich.

Sometimes you don’t even feel like making a Sandwich — Inspired by Top Chef’s Deconstruction Challenge, I had Deli Shaved Honey Turkey with Sliced Aged White Sharp Cheddar Cheese and my favorite Dill Pickles.  A Sourdough Crouton, Aioli and a lot more style might make it a show contender?!  This is the one minute unsophisticated, I’m hungry now version of a Turkey Sandwich on a paper plate.  It hits the spot with a glass of Milk.

Baskin Robbins Ice Cream and Cake Dance commercial — Have you seen it?  Some find it completely annoying and others find it oddly funny.  What do you think about it?  We had one of the Ice Cream Cakes for a birthday celebration.  It was okay.  I like the combination, but (unfortunately) always find the Cake portion a little dry.  Back to the commercial, Ice Cream and Cake, Do the Ice Cream and Cake — I find it oddly funny, boarderline annoying and a little creepy, my Mom says she can’t turn the channel fast enough when it comes on, and my Brother-in-Law sings it at the Fire Station with another Fireman who thinks it’s funny.

Food Network’s Down Home With The Neelys, Pat’s Smoked Sausage & Pepper Sandwich.

Patrick and Gina of TV Food Network’s Show Down Home with the Neeleys are so cute — They have a lot of fun together centered around food.  Their happy interaction and enjoyment made me want to make Pat’s Sausage and Pepper Sandwich, and I’m generally not a fan of Sausage Sandwiches.  Another appeal is the Beer in the Sauce.  And since I didn’t have Neely’s BBQ Sauce (in the recipe), I used Lucille’s BBQ Sauce.

I went to Henry’s Farmers Market for the Sausage — They didn’t have a Smoked Sausage, but the Butcher highly recommended the Pork Sausage  over the Turkey, when asked the difference between the two Sweet Hot Italians.  As a substitution, I opted for the Pork and was glad it was $1 less a pound.  And I ended up with Potato Rolls that were toasted inside.

Confession:  It wasn’t until after the preparation of this recipe did I realize that I misunderstood and used the wrong type of Sausage.  The key word is “smoked” and I used fresh Sausage.  A Kielbasa in a vacuum pack may have been better, especially since casings gross me out.  Good thing I cooked the Sausage well done.  And I cooked all ingredients longer (except the Garlic) than noted on the above linked recipe.  Onions are always best caramelized and the Peppers were added after the Onions cooked a bit.

Overall, it’s a great recipe — The Sauce turns out pretty tasty.  I now wanna make it with a Kielbasa, and might not eat it on a Sandwich.  Luckily all who tried this preparation liked it.

The Next Food Network Star, More Should Go.

family-food-network-022After the 3rd episode of The Next Food Network Star, I voted for Teddy to go, but it was Eddie who got the boot.  I’m okay with that too — Both should go.  I’m noticing that several season 5 contestants are competing as if they’re on a one time reality show, instead of putting forth their integral best.  Although the show is reality based, the prize requires good relationships, not ruthless play for a single monetary pay-off.  My favorites thus far are Jeffrey, Melissa and Katie.  The above photo includes Jeffrey, Teddy and Michael (l-r).

The Next Food Network Star Premiers – It’s Time To Vote & Win.

The Next Food Network Star Season 5 officially started.  Vote for who you would have eliminated — I did.  Voting will also enter you in a sweepstakes to win a Grilling Oasis Package.  It appears my first vote is with the majority for Debbie, who remains on the show.  So far the public differs with the Food Network Judges.

Above from left to right, Jen who was the first to be eliminated, Debbie who most people voted should be eliminated, and Jeffrey my favorite so far.  We’ll see what happens next week.

This year, starting June 7th YOU can be a Judge of The Next Food Network Star and each week’s vote will enter you to win a Grilling Oasis.  I’m not sure what’s entailed with a Grilling Oasis, but it sounds pretty good.  I’m gonna watch and vote.
